Chinese cuisine is one of the most complex culinary systems in the world, yet for centuries, the logic and philosophy behind its tools have remained a story seldom told. Our mission is to change that—to bring the quiet, powerful, and understated wisdom of the Eastern kitchen into more homes around the globe.
This knife is not a new design. It is the collective wisdom of a thousand years.
Its shape wasn’t born from a single designer’s flash of inspiration. It was forged by generations of Chinese cooks over centuries of daily use in bustling, smoke-filled kitchens. Every curve, every proportion, every gram of its weight is the result of countless hands discovering what is simply ‘just right.’
We believe that not all “innovation” is progress. Some things endure for a reason: because they simply work. Our philosophy is therefore one of respect, not reinvention. We see our role not as designers, but as custodians of this tradition. We meticulously refine its details with modern craftsmanship—making it sharper, better balanced, and more comfortable—so that this timeless wisdom can be seen and used once again.
Our story is rooted in 1200 years of unbroken craftsmanship.
Our journey begins in Chongqing, the heart of Sichuan cuisine, and leads us to the historic town of Longshui. Since the Tang Dynasty, Longshui has been one of China’s great centers for knife forging. Here, the art of the blade is passed down through generations.
Longshui knives are celebrated for their thin, resilient blades, a character hammered into the steel, blow by blow. This ancient forging gives the knife its soul: light but not flimsy, sharp but not brittle, a perfect balance of flexibility and strength. Upon this foundation, we layer modern precision—controlled heat treatments and CNC grinding—to ensure that the soul of tradition is supported by the stability of modern technology.
With over a decade of experience in the cutlery industry, this project is something we approach with profound reverence. It is our first time telling the story of the Chinese kitchen knife to the world in this way.
This is a kitchen tool from the East.
