步骤 | Cooking Steps
🥣将中筋面粉和盐放入大碗中,加入适量水搅拌成团 – Mix flour and salt in a large bowl, add water and form a rough dough.
🖐️加入少许植物油,揉面至光滑 – Add a little vegetable oil and knead the dough until smooth.
⏱️第一次醒面10分钟 – Let the dough rest for 10 minutes for the first proof.
🖐️再次揉面,醒10分钟 – Knead the dough again and let it rest for another 10 minutes.
✂️将面团分成小块 – Cut the dough into small pieces.
🔪擀制面块并刷油 – Roll out each dough piece and brush with oil.
🛑放入保鲜盒,静置1小时 – Place in a container and let rest for 1 hour.
🥬小葱切丁,韭菜切段,大蒜切沫 – Chop scallions, cut chives, mince garlic.
💦水中加盐,将豆芽、小白菜、韭菜焯熟捞出备用 – Add salt to water and blanch the vegetables, drain and set aside.
🍜拿出面块,拉成面条 – Take a dough piece and stretch it into noodles.
🔥水开后下入面条,煮至浮起沥干捞出 – Add noodles to boiling water, cook until floating, then drain.
🥗加入韭菜、豆芽、小白菜、盐、味精、蒜沫、小葱、辣椒面、花椒粉 – Add chives, bean sprouts, bok choy, salt, MSG, garlic, scallions, chili powder, Sichuan pepper powder.
