Fried rice with egg is one of the simplest yet most beloved Chinese comfort foods. Fragrant, fluffy rice is stir-fried with eggs, scallions, and light seasoning, creating a dish that’s quick, satisfying, and endlessly versatile. Perfect as a main or a side, it’s a recipe every kitchen should master.
Ingredients
- 2 cups cooked jasmine rice (preferably chilled overnight)
- 2 large eggs
- 2 scallions, chopped
- 2 tbsp vegetable oil
- 1 tbsp light soy sauce
- ½ tsp salt
- ¼ tsp white pepper
- Optional: peas, carrots, or corn for extra texture
Directions
- Prepare the rice: Make sure the rice is cold and separated. Break up any clumps with your hands or a fork to ensure even frying.
- Cook the eggs: Heat 1 tbsp oil in a wok over medium-high heat. Beat the eggs, pour them in, and scramble quickly until just set. Remove and set aside.
- Stir-fry the rice: Add the remaining oil to the wok. Toss in the rice, stir-frying quickly to coat every grain with oil. Spread it out and let it sear briefly for a smoky aroma.
- Season: Return the scrambled eggs to the wok. Add soy sauce, salt, and white pepper. Stir well to combine.
- Finish and serve: Toss in chopped scallions, stir briefly, and serve hot.
Recipe Notes

Cold, day-old rice works best for fried rice, as fresh rice tends to clump and turn mushy.
Sourcing
Jasmine or medium-grain rice gives the best texture and fragrance.
Substitutions
Use tamari for a gluten-free option, or add a splash of sesame oil for extra depth.
Storage
Best eaten immediately, but leftovers can be refrigerated for up to 2 days. Reheat in a wok or skillet for best results.
